Chicken Tortilla Soup

I made this tonight for dinner. It was yummy and VERY VERY easy!!!!


In a large pot, combine and heat on low:
- 1 can cream of chicken soup
- 1 can chicken broth
- 1 can rotel
- 1 can corn
- 1 can black beans (washed)

While that is warming up, cook some chicken breasts. When finished, shread the chicken and add to the soup. Bring to a boil and then it's ready to serve. (I let it cool just a little).

Serve with cheese and a scoop of sour cream.

This was a hit, and will be made again!

Paco is on the way

Okay, so if you know anything about my funny family... You know at my sister started naming Bryan and my future children.   Erin and my parents started calling Bryan 'long hair Jesus boy' when we first started dating, which soon became 'Jesus' (in Spanish).  One day Erin said (out loud) "how do you spell 'Jesus?' ... H-e-y-z-e-u-s?"   Therefor, as you can imagine, that has stuck.  Bryan is now Heyzeus (Jesus). Erin started brainstorming names for our future children shortly after that, and she came up with Paco.  She started referring to Paco on a regular basis and then became concerned... What if we had a girl... You can't name a girl Paco... So Pacetta was the answer.  Now she claimed that we had Paco and Pacetta on the way.  If we had twins, we could name them Pac and Pac...we could call them 2-Pac for short.  Needless to say... Paco has been destined to be in our family.

Introducing, Paco Hazzard....





 

 
He is a toy fox terroir.  This is on the day that we met him, (Nov 20th).

We got him Dec 1st, weighing 3 lbs 2 oz.  He was born Sept 19th.  He was in a wonderful foster home and was very well taken care of before we adopted him.  My sister-in-law offered to go pick up Paco from Humble when Bryan had to work.  It was wonderful!  She drove home and I got to cuddle with my sweet new Paco.  (He got sick on the drive home... welcome to pet ownership!)

When Bryan got home, we had a nice family time on the kitchen floor trying to bribe him to walk around on his own.... it worked :)





Paco was terrified the entire night, be eventually he warmed up to us.  He slept through the night just fine and woke us up at 5 to go outside. 



 


He now is a whopping 3 lbs 5 oz.

 
 


He has met the whole family and everyone seems to like him :)  This is him playing with his cousin Bella, my sister's dog.  We have been babysitting Bella the last few days and they are having a blast.

In the beginning...

What we got when we got the keys....  Dirty, Dirty, Dirty!  Part of our contract stated that the owner would have the house professionally cleaned.  Boy, did we get dooped... didn't happen, and the house was gross!  The gentleman that owned the house before ate curry, but by the way it smelt... he must have eaten curry for breakfast, lunch, dinner and a midnight snack.  It really was gross!  On top of that, his family had all gone back to India, and he was living a bachelor lifestyle for over a year.  Who needs to clean?  I mean seriously?  We had to empty our vacuum cleaner 3 times when we vacuumed the living room alone!  Gross!

These are the pictures from the first day of being a home owner.
 
 
When you walked by the light at the garage it would yell "YOU ARE TRESPASSING!" and scare the living daylights out of you!  Or at least out of me.  It took us a while to figure out how to disarm this.
 

I really like the front door.  It needs to be refinished, but I think it is really pretty. 

 
The porch off to the side of the door.  One of my Pawpaw's chairs will go perfectly there!  ;)

 
Right as you come in the door, to the left are French doors to the study.

This is standing at the beginning of the living room, looking down the hall way to the front door.  To the right is the study, and then the dining room.  To the left is a hallway that goes to the 3 other bedrooms, guest bath, laundry and garage.

 
This is looking into the dinning room.  We love the crown molding and detail at the ceiling.  Not sure about the broken blinds.  Didn't know about those until the walk through, and at that point... who cares?

Stepping back further into the living room, you can see the start of the kitchen on the right.  Bryan had to check everything, and make sure it was up to par.  (really, we were beginning to see just how dirty the kitchen was... did I mention there was a smell?)

I love the huge island in the center.  I don't think it has been that empty since we bought it...


 
Off the kitchen is the breakfast room.  Very open.  The kitchen, breakfast and living rooms are all one big room.




Now, My blog has said that I am out of picture room.  I am very sorry!  This is all you get for now! :)
